The "Non Sempre" from the La Felce winery is a white wine made from the best vintages of Vermentino. Andrea Marcesini, known as "Il Marcè", has been managing the family-run business since 1998 and has since sought to express the characteristics of his territory, Lunigiana, through the commitment and passion he puts into cultivating the grapes, aiming to offer a simple and genuine wine. His bottles are characterized by a frank, saline, and mineral character, which evokes the typical scents of the Mediterranean scrub.
To produce the white "Non Sempre", a portion of the "Monte dei Frati" is harvested, Vermentino in purity made every year by Andrea, and the liquid is left to age on the lees for a year. As with all wines from La Felce, the grapes are handpicked and do not undergo chemical fertilization, but only treatments with copper and sulfur are tolerated, in order to preserve the integrity of the land. Once harvested, the grapes are left to ferment spontaneously in vats of steel and remain in contact with the skins for 48 hours. It is bottled without the aid of filtration, clarification, and the use of sulfur is minimal. The result is a genuine and intense wine.
The “Non Sempre” from La Felce presents itself with a straw yellow color with shades tending to golden. Elegant and fruity, the nose is rich and complex. Aromatic herbs, citrus, and salt combine harmoniously, catapulting the drinker into the Ligurian Mediterranean scrub, only to be pampered by notes of shortcrust pastry and grain due to the long aging on the lees. The sip is sharp and fresh, slightly and pleasantly astringent, enveloping the palate and finishing with a minerality that invites a subsequent tasting and makes it suitable for various pairings without overshadowing the characteristics of the food.
