Ama Brewery introduces the Pet-Nat Tea ‘HIRU’, a kombucha made in Spain that surprises with its important personality and expressive depth. The production reality of Ama Brewery was born in the Basque Country thanks to the intuition of Dani Lasa and Ramon Perisé, who started producing kombucha out of passion and a desire to experiment in a small garage in San Sebastián. At the base of their slightly sparkling low-alcohol teas is the pure water from the Izzarraitz Massif spring and a careful selection of teas and herbs from around the world.
The Pet-Nat Tea ‘HIRU’ from Ama Brewery is made from water sourced from the Izzarraitz Massif spring in the Basque Country, infused with teas of Malawi Green and Malawi White Peony. These teas are grown by a small family-run estate in Malawi, named Satemwa, and are processed through steaming according to traditional Japanese style. The seeds of these varieties originate from
the province of Fujian, China, and were first transported to the Royal Botanic Garden Edinburgh and then to the remote mountains of East Africa. Once the infusion and fermentation process is complete, the Pet-Nat ‘HIRU’ remains in the bottle for 6 months to refine before its final market release. The ‘HIRU’ Pet-Nat Tea from Ama Brewery has a cloudy straw-yellow color with golden reflections. The aromatic range is articulated and complex, defined by aromas of dates and tropical fruit that meet perceptions of hay and dried herbs. On the palate, it is characterized by a refreshing liveliness that contributes to outlining the vivacity and crispness of the sip, in a finish that insists on herbal and floral notes.
