The Primitivo del Salento Rosato wine is a product of the extraordinary land of Salento, which has been dedicated to viticulture for centuries. The winery Notte Rosa is located in Sava, in an area characterized by a warm and dry Mediterranean climate, mitigated by the presence of gentle sea breezes. The Primitivo vineyards are situated at an altitude of about 100 meters above sea level and are cultivated on shallow, medium-textured soils, predominantly sandy and rich in skeleton. The bunches undergo a cold maceration for a few hours before soft pressing. The free-run must is sent to the classic white winemaking process, with fermentation in stainless steel tanks at a controlled temperature of 15 °C, for a period of a couple of weeks. It finishes its journey for a few months in steel tanks before being bottled.
