The Red ‘Le Chant du Coq’ from the South African project Le Chant is a label characterized by a modern and international style, resulting from a particular blend of Bordeaux-origin varieties, Shiraz, and Sangiovese. This bottle expresses the meeting between the Old and New Worlds, particularly between the French wine tradition and the contemporary winemaking approach of South Africa. Behind the Le Chant project lies the experience of the Oddo family, of French origin, involved in the wine world for five generations, and a key player in various realities spread between France and South Africa, including Le Piton in Sancerre, Taaibosch in Stellenbosch, and Le Chant, also in Stellenbosch.
At the origin of the Red ‘Le Chant du Coq’ from Le Chant is a peculiar assembly of Merlot (38%), Cabernet Franc (30%), Cabernet Sauvignon (21%), Shiraz (9%), and Sangiovese (2%). These varieties are cultivated according to the principles of organic farming in the Poolkadraai area, on hilly soils well exposed to the cool ocean breezes. The harvest is done entirely by hand, and the bunches are then vinified in red with fermentation alcoholic in stainless steel tanks accompanied by skin maceration. Subsequently, the wine is transferred to French oak barrels for aging of over a year, followed by an additional maturation of 11 months partly in cement. Finally, after about 6 months of resting in the bottle, the wine is ready for market release.
‘Le Chant du Coq’ Red Le Chant has an intense ruby red color. On the nose, there are precious notes of blackberry, raspberry, violet, olive, cinnamon, and dried herbs. A fresh and vibrant tasting experience, defined by a very elegant tannic structure that contributes to the excellent overall structure, anticipating a coherent fruity and spicy finish.
