The Sake Junmai Rokkasen Nigori is a fresh Sake with a slightly sweet profile and a cloudy white color due to the presence of sediments. It has a creamy, elegant flavor with a good aromatic sweetness that recalls puffed rice. We recommend shaking the bottle before drinking and serving it at a cool temperature

processing. The procedure follows the classic phases, with the addition of koji to the polished rice to transform starch into sugar. Fermentation follows using Saccharomyces cerevisiae yeasts. To enhance the typical Nigori notes, additional rice is added at this stage, making the taste of the Sake softer and richer.

The Junmai Nigori Sake from Rokkasen presents itself with a slightly cloudy appearance and a light sediment of rice at the bottom of the bottle, due to the use of a wide mesh filter, which allows for the retention of suspended microparticles. As is the case with sparkling wines sur lies, in this case, one can choose, according to personal taste, whether to pour the Sake leaving the sediment at the bottom or to gently shake the bottle to bring it into suspension.
