Among the rows, practices of both organic and biodynamic. The must obtained from pressing the best grapes ferments spontaneously thanks to the presence of indigenous yeasts, 60% in new barrels and 40% in used wood. The aging lasts between 8 and 12 months and takes place in fermentation tanks.

On the palate, it is medium-bodied, elegant, with a captivating sip that flows with a savory and fresh taste. A label with which the Alphonse Mellot winery synthesizes all the virtues of the Sancerre terroir.
