
Sangiovese 'Le Cese' Collecapretta 2021
ArtisanalThe Sangiovese "Le Cese" from Collecapretta is a red wine from Umbria in the Spoleto area, produced by a winery that pays great attention to sustainability. The vines are cultivated with the typical trellis training, an example of attachment to tradition. On the nose, there are 'red' aromas: cherry, berries, violet... with intriguing earthy and leather hints. On the palate, it is elegant, very pleasant to drink, thanks to a fresh, dynamic, and very juicy sip. A versatile wine perfect with delicious traditional first courses, such as pasta alla norcina.
The Umbrian winery Collecapretta presents the Sangiovese ‘Le Cese’, an artisanal red wine with remarkable depth and expressive purity. Sangiovese holds the title of the most widespread grape variety in Italy, surely due to its great adaptability to different pedoclimatic conditions as well as the noble organoleptic qualities of the wines that derive from it. It seems that the name of this ancient variety comes from the appellation “Sangue di Giove”, as it was known already in Etruscan times. Today, Sangiovese, widely cultivated in Toscana, Marche, Umbria, and Romagna, can be distinguished into numerous clones originating from the multitude of territories where this grape has been traditionally grown.
‘Le Cese’ Collecapretta Sangiovese is an expression of the homonymous variety in purity from vines cultivated in a truly sustainable manner on clayey-limestone soils, at an altitude of about 600 meters above sea level. Following the manual harvest, the bunches are fermented in glass-cement tanks for spontaneous alcoholic fermentation in contact with the skins. After the racking, the mass continues to mature in glass-cement tanks for 8 months until bottling, which occurs without any addition of sulfites.
In the glass, the Collecapretta ‘Le Cese’ Sangiovese reveals a bright ruby red cloak. The olfactory mosaic consists of fascinating hints of fresh cherry, violet, and aromatic herbs, enriched by peculiar notes of earth, roots, and leather. Elegant, dynamic, and drinkable sip, characterized by juicy freshness and pleasant tannic texture. The Sangiovese ‘Le Cese’ is a red wine of exceptional versatility in food-wine pairing as it can successfully accompany a wide range of dishes.
