The Sherry Pedro Ximenez by Emilio Hidalgo is one of the most classic Andalusian wines, produced in the ancient bodega of Jerez de la Frontera with pure Pedro Ximenez grapes. It is a sweet, complex, and deep liquor wine, a true excellence that is still made today using the ancient artisanal Solera method, blending wines from many vintages to achieve an expressive harmony and a truly unique taste balance.

The Pedro Ximenez by Emilio Hidalgo is one of the iconic wines of the Jerez territory. The origins of the winery date back to the mid-1800s, and even today, the headquarters is in the ancient family home, which with its thick walls and very high ceilings, offers ideal environments for aging the precious wines. The hot and dry climate, always tempered by the proximity of the sea and the white soils rich in limestone and gypsum outcrops, provide the perfect conditions for cultivating the Pedro Ximenez grape variety. The grapes are harvested very ripe and after a partial drying, they are vinified with an incomplete fermentation, leaving a residualsugary. The production still takes place using the ancient Solera method, which involves stacking the barrels one on top of the other to form a sort of pyramid. The young wine is placed in the highest barrels, and when it is time to bottle, the wine is drawn from the lowest barrel. In a cascading manner, all the barrels are refilled with wine from the row of upper barrels. This method allows for the maturation of the wines through a blending of various vintages, ensuring perfect harmony.

The Sherry from the Jerez de la Frontera winery Emilio Hidalgo is a great wine of the Andalusian tradition, perfect to enjoy with dark chocolate, cocoa desserts, or dry pastries. It presents itself with a dark amber color, intense and deep. The aromas seduce with richness and breadth, with notes of dried fruit, candied fruit, citrus peel, caramel, toasted hints, and wood. The sip is caressing and enveloping, with a soft, dense, and spicy sweetness, fruity memories, and a very persistent finish.
