Spumante Metodo Classico Extra Brut "Nove" by Buvoli is a sparkling wine of great character, a pure Pinot Noir produced by a winemaker from Veneto who dedicates his work to this variety, with love and dedication. The aromatic profile is surprising: evolved notes of citrus fruits, then underbrush, walnut and slight sweet and smoky hints on the finish. The Spumante Metodo Classico ‘Nove’ Extra Brut by Marco Buvoli represents a handcrafted label of sublime purity and class produced in very few selected examples, quantifiable in a few hundred bottles. Passion, expertise, and dedication are the ingredients that have allowed Marco to carve out a place of honor in the landscape of Italian artisanal Metodo Classico.

Marco Buvoli L’Opificio del Pinot Nero Spumante Metodo Classico Extra Brut ‘Nove’ comes from only Pinot Nero grapes grown following the principles of organic and biodynamic agriculture. This label is crafted from a blend of wines from different vintages, partly aged in wood according to the Metodo Solera. The winemaking practice always involves a manual harvest of the bunches, accompanied by a strict selection, and the subsequent soft pressing aimed at extracting only the free-run must. All fermentations occur spontaneously thanks to the sole intervention of indigenous yeasts, and after the blending of the sparkling base, the secondbottle fermentation according to the Metodo Classico. The aging sur lie lasts for as long as 9 years, from which the name of this label derives, at the end of which the disgorgement and the subsequent Extra brut dosage are carried out.

The ‘Nove’ Spumante Metodo Classico Extra Brut Buvoli is golden yellow in color with fine bubbles. From the glass emerge broad and characteristic aromas of lemon marmalade, dehydrated pineapple, broom, walnut, underbrush, aromatic herbs, and honey, punctuated by smoky notes. Elegant and complex taste, with a fine and delicate bubble and a pleasantly oxidative character. The long finish insists on notes of dried fruit and fresh citrus sensations. Marco Buvoli himself recommends tasting this sparkling wine not too cold in a wide glass, so as to enhance its thousand facets.
