The Metodo Classico Brut “Oltrenero” is a sparkling wine made from the principal grape of the estate's vineyards, that Pinot Nero which in the Oltrepò Pavese can give unique emotions. This “Oltrenero” is no exception, the result of nearly three years of aging on the lees, fragrant and seductive thanks to a fine, exuberant foam. A label capable of creating the perfect setting for the most varied occasions, from the most formal celebrations to the most intimate and romantic aperitifs.
The Brut “Oltrenero” is a Metodo Classico sparkling wine that comes from pure Pinot Nero grapes, cultivated in the terroir surrounding Zenevredo, within the Oltrepò Pavese. The clusters harvested during manual harvesting are pressed whole, and the must obtained from this operation undergoes static decantation for 12 hours; we then proceed with the first fermentation, carried out in steel for 12 days. The second fermentation then takes place directly in the bottle, following the production principlesof the Metodo Classico, and the sparkling wine remains to age on the lees for a total of 30 months, after which the winery proceeds with the disgorging, dosage, and bottling operations.
The Metodo Classico Brut “Oltrenero” presents itself in the glass with a light straw yellow color, crossed by a fine and persistent perlage. A subtle array of notes spreads to the nose, highlighting an aromatic trace composed of floral and fruity references, from which gentle hints of yeast emerge. On the palate, it is medium-bodied, with a tense, fresh, savory, and citrusy sip, harmonious in its unfolding. A label whose tasting charm is of rare intensity, perfect for pairing with luxurious ingredients, such as an inviting salty oyster or a sweet crustacean.
