The Spumante Brut Soldati from the Piedmontese winery La Scolca is a Metodo Classico made in the Gavi area, using pure Cortese, the white grape variety that symbolizes the territory. Thanks to its expressive finesse and its characteristic of maintaining good freshness even upon reaching full ripeness, Cortese has proven to be very suitable for sparkling wine production using the Metodo Classico. Fresh and elegant, it expresses refined floral notes and delicate fruit, making it very suitable for tasting at aperitif time and with light seafood or vegetable appetizers.

The Metodo Classico Brut Soldati is born in the magnificent hilly territory of Gavi, in the lower Piemonte area, towards the border with Liguria. The winery La Scolca is one of the most important realities of the territory and cultivates vineyards in the prestigious Rovereto area. An area always famous for the quality of its grapes, so much so that it is recognized as a true cru of the Cortese grape variety. The estate extends over 50 hectares, beautifully exposed to the sun and characterized by very suitable soils. The climate, mild and breezy, is influenced by the marine breezes that rise from the Ligurian Sea. Healthy, aromatically rich bunches and careful winery practices in the Metodo Classico processing allow for a label that stands among the best realizations of sparkling wines from indigenous grapes.

The Brut Soldati from the Piedmontese winery La Scolca is a Metodo Classico particularly suitable for those who wish to taste labels produced outside the classic sparkling wine regions. It is the bottle for those who love to drink outside the box and seek a special, unique, and inimitable glass. The best bunches of Cortese, harvested in a way that preserves high acidity, are softly pressed and the free-run must is sent for classic white winemaking. After a few months, the base wines are blended for the second fermentation phase, which takes place in the bottle according to the Metodo Classico, with aging on the lees for 24 months. In the glass, it presents a straw yellow color, with a fine and continuous. The bouquet expresses delicate floral fragrances, aromas of white-fleshed fruit, and slight hints of bread crust. The sip is inviting and smooth, with a soft mid-palate and a finish of beautiful mineral freshness.
