The "Perpetuo" is a classic method sparkling wine by Nicola Gatta, a craftsman from the eastern hills of Franciacorta. It is produced with the Solera method of old vintages and aged for at least 36 months on the lees. It has a golden yellow color with a very fine and persistent perlage, as well as a very evolved and complex profile, with ethereal sensations, dried flowers, dried fruit, flavors of licorice, fennel and light smoky sensations

The Spumante Nature Metodo Classico Blanc de Noirs ‘Perpetuo 36 Lune’ from the Lombard producer Nicola Gatta is a sparkling wine with a sublime expressive depth, produced from only Pinot Nero processed according to the Metodo Solera and then sparkling. In Gussago, in the far east of Franciacorta, Nicola Gatta creates exceptional Metodo Classico through a handcrafted winemaking approach, which led him to choose to forgo the denomination to free himself from restrictive schemes that limit his spontaneous creativity.

The ‘Perpetuo 36 Lune’ Spumante Metodo Classico Nature Blanc de Noirs by Nicola Gatta is crafted through a blend mainly of old vintages of Pinot Nero, processed using the Metodo Solera. The vines, cultivated following the principles of biodynamic agriculture, rest on limestone hills of marine origin, at about 400 meters above sea level. The fermentations always occur spontaneously and, once ready, the sparkling base is placed in the bottle and added with tirage syrup for the foam capture in according to the Metodo Classico. After 36 months of resting on the lees in glass, the disgorgement is carried out, followed by topping up with the same wine, without any addition of sugars.

The Blanc de Noirs Nature Spumante Metodo Classico Nicola Gatta ‘Perpetuo 36 Lune’ is golden yellow in color with very fine and persistent perlage. The nose reveals broad hints of toasted hazelnut, dried flowers, and aromatic herbs, combined with perceptions of sweet spices and smoky and toasted nuances. A fine mineral note completes the aromatic context. Creamy and articulated in taste, of great richness and intensity, with a brilliant freshness to support it. This is a gastronomic sparkling wine that requires pairings of some importance, such as flavorful second courses of fish.
