For the creation of the zero dosage, the best bunches are carefully selected, those that present a perfect balance between aromatic richness and freshness. The absence of added sugar presupposes the use of superior quality grapes, capable of express a perfectly balanced harmony, which comes directly from the vineyard. At the end of the manual harvest, the grapes are pressed very gently and the free-run must is started to ferment at controlled temperature. After aging for a few months, partly in steel and partly in wood, the base wines are blended to create the cuvée. The second fermentation takes place in the bottle, with a sur lattes aging of at least 5 years before disgorgement.
