
Spumante Metodo Classico 'Subsidium' Cherubini
ArtisanalCherubini's Metodo Classico Sparkling wine 'Subsidium' is distinguished by its depth of aromas, in which oxidative notes stand out, and by its rich and structured palate, accompanied by a lingering minerality. The Chardonnay and Pinot Noir grapes are vinified separately in cement vats, where they ferment using indigenous yeasts. This is followed by blending and maturation for 60 months, ending with disgorgement and topping up with the same wine.
The Spumante Metodo Classico ‘Subsidium’ Riserva Nature represents a valuable and complex sparkling wine produced by the artisanal winery of Cherubini from Brescia. The estate is located beyond the eastern borders of Franciacorta, a few kilometers from the center of Brescia, where the vineyards dedicated to Pinot Nero and Chardonnay benefit from the clay-limestone matrix of the soils, as well as from the cool climate with significant temperature fluctuations between day and night. These parameters allow for a remarkable accumulation of aromatic precursors and a greater preservation of organic acids, characteristics that are essential for the production of great sparkling wines.
The ‘Subsidium’ Riserva Nature Spumante Metodo Classico consists of an equivalent blend of Pinot Nero and Chardonnay, sustainably grown on clay-rich limestone soils. After manual harvesting, which takes place between the end of August and the beginning of September, the Pinot Nero is very lightly pressed whole while the Chardonnay undergoes the classic soft pressing and the grapes are then vinified separately in cement tanks, where the indigenous yeasts carry out the alcoholic fermentation. At the end of spring, the blending of the masses is carried out, followed by the second fermentation in bottle according to the Metodo Classico, with a minimum aging of 60 months on the lees, after which disgorgement is performed and the wine is topped up with the same wine.
Cherubini Spumante Metodo Classico Riserva Nature ‘Subsidium’ has a golden yellow color with ochre hues, with fine and persistent effervescence. Deep and broad floral and ripe fruit notes characterize the olfactory profile, with mineral hints and light oxidative notes framing it. On the palate, it is soft and rich, strong and structured, with a pleasant fresh-salty push.
