Cabana das Bolboretas' Sparkling Nature 'Gorgola 46 Mesi' is an elegant and refined Galician Metodo Classico. It is made from 100% Albariño grapes from century-old vines grown on ungrafted roots in calcareous and sandy soils. Ageing for 46 months on the lees increases the aromatic complexity and makes it velvety on the palate. The nose reveals hints of baked apple, notes of yellow flowers and hints of toasted almonds, with delicate hints of yeast. On the palate, it is fresh but enveloping, with a long salty finish and a delicate but persistent perlage. It pairs perfectly with oysters au gratin
