The Classic Method Rosé Brut “Cruasé” from the Mazzolino winery is a sparkling wine of great pleasantness and elegance produced in Corvino San Quirico in one of the most suitable areas of Oltrepò Pavese for the production of bubbles using the bottle fermentation method. The “Cruasé” Classic Method is a cru rosé sparkling wine obtained from pure Pinot Nero grapes coming from vineyards cultivated using the traditional guyot method, on gentle hills located at an altitude of about 180-220 meters, characterized by soils with clayey-silty surfaces and sandy veins with a deeper chalky substrate. The family-run winery owns about 25 hectares of vineyards and is currently managed by Sandra Braggiotti, supported by the French oenologist Jean-François Coquard.

The “Cruasé” Rosé Brut Classic Method is a sparkling wine produced with grapes hand-picked into small crates, with repeated harvest passes depending on the different plots, generally in the first decade of August. The bunches, brought to the winery, after a few hours of maceration, undergo sequential pressing, followed by alcoholic fermentation in steel tanks at a controlled temperature of about 18-20 °C. Once the base wine is obtained, the addition of the liquer de tirage for the sparkling process and bottle fermentation on its own yeasts is carried out, which for the “Cruasé” lasts about 44 months. After the aging period on the yeasts, the wine is disgorged and the liquer de tirage is added to bring this Classic Method to the desired sugar level, as per the Brut category.

The Brut Classic Method Rosé “Cruasé” presents itself with a light salmon pink color with coppery highlights and a fine, persistent perlage. On the nose, fragrant aromas of red berry fruits appear, including raspberry, wild strawberry, and blueberry, notes of white flowers and hints of rosemary, scents of lemon peel, almond, and toasted bread crust. On the palate, it is soft,
