Casa Caterina Spumante Rosé Metodo Classico Extra Brut ‘36’ is an artisanal sparkling wine that stands out for its captivating fruity and floral aromas. The family-run winery Casa Caterina is located in Monticelli Brusati, a municipality in the north-eastern part of the Franciacorta area, a renowned denomination that the Dal Bono family has chosen to forgo. The decision not to label their sparkling wines with the DOCG Franciacorta comes from the fact that Casa Caterina's agronomic and oenological work goes well beyond the rules set by the production regulations, which the family considers too lenient. Furthermore, tasting the wines from the estate immediately reveals a character quite different from the standards of Franciacorta, a stylistic signature of Casa Caterina.
The Extra Brut Metodo Classico Rosé ‘36’ from Casa Caterina comes from a blend of red grapes vinified as rosé. The vines are cultivated according to biodynamic principles on clay-limestone soils. Following the harvest, the bunches are transferred to the winery and vinified through a brief contact between the must and the skins. The alcoholic fermentation occurs spontaneously thanks to the presence of indigenous yeasts, without the aid of additives and oenological auxiliaries. Subsequently, the sparkling base is placed in the bottle and added with frozen must, therefore excluding the use of exogenous sugars, for the second fermentation according to the Metodo Classico. After at least 36 months of aging on the lees in the bottle, the disgorgement is carried out and the subsequent topping up with the same wine, without dosage.
The Metodo Classico Spumante Rosé ‘36’ Extra Brut Casa Caterina has a bright pink color with soft orange hues. Pleasant and seductive are the hints of red fruits and dog rose petals that define the nose, accompanied by intriguing notes of pink grapefruit. Vibrant and creamy sip, supported by pleasant freshness.
