The Carpano Red Vermouth represents the original label, the tradition linked to the ancient recipe of the creator of Vermouth. The bottle bears the date of 1786, the year in which Antonio Benedetto Carpano invented Vermouth. A descendant of historic customs of flavoring wines that date back to ancient times, Vermouth represents the codified version at the end of the '700 and is still made with the same ingredients. Its strength lies in having traversed the centuries without yielding to trends, always remaining true to itself. Today it renews its charm in a context of lively attention towards the world of Vermouth, especially for its use in cocktail creation.
The Carpano Red Vermouth is a Piedmontese excellence that still today is a protagonist of the aperitif and the art of mixology. It is made with a base of medium alcohol content wines, produced with indigenous Italian grapes from Romagna, Puglia, and Sicily, which are processed within 24 hours to avoid oxidation. The process continues with the extraction of aromas from plants, herbs, spices, and roots through hot infusion or cold extraction, depending on the type of herb. Among the three ingredients used is high-quality saffron, mostly sourced from the plateaus of Iran, Absinthe from the Piedmont Alps and the Aosta Valley, and burnt sugar, which not only sweetens but also adds a slightly caramelized note. At the end of the extraction phase, which lasts several months, the Vermouth is refined for a period of a few months before being bottled for subsequent commercialization.
The Carpano Red Vermouth, born in the historic Turin company Carpano, is now part of the vast catalog of the Fratelli Branca Distillery, which preserves the precious secret recipe, known only to three people within the company. The Carpano Red Vermouth presents itself with a dark amber color and immediately expresses aromas of oriental spices, vanilla, orange peel, dried fruit, and medicinal herbs, on a winey background. Soft, warm, and enveloping, it has a broad, complex, and very persistent sip, finishing with notes delicately spiced.
