The ‘Sankt Anna’ from In der Eben is a Schiava that comes from the volcanic soils above Bolzano. A historic reality that works organically and biodynamically, part of the stems are left in fermentation to extract tannin and structure. On the nose, it releases aromas of wild strawberries and violet, with hints of pink pepper and fresh grass. On the palate, it is fresh and smooth, with soft tannins and an intense savoriness that enhances its drinkability. Ideal for pairing with white meats such as roast chicken or smoked cold cuts
