The Vin Jaune by Domaine de la Borde is a rich and exuberant white wine produced in oxidative style, with the formation of yeast flor and aging for 75 months in oak barrels. It has a complex and intense bouquet of dried fruit, nuts, sweet spices and a dry, spicy, fresh and very long taste. 

The Vin Jaune from Domaine De La Borde is a kaleidoscopic and multifaceted oxidative wine that plays in the championship of great bottles for meditation. 5 hectares cultivated with the utmost respect for nature, in a wine region, that of Jura, with enormous potential but still partly unexpressed: this is the reality of Julien Mareschal, a French winemaker, who after various experiences at the helm of other wineries decided to bring his creation to life in Pupilin, the beating heart of this area that extends about 40 km from Burgundy. Space for local indigenous grape varieties, of course, such as Ploussard, Savagnin, and Trousseau surrounded by Pinot Nero and Chardonnay that in this area give rise to particularly valuable products.

The Vin Jaune is produced from pure Savagnin grapes, harvested strictly by hand. The peculiarity of this rarity produced exclusively in Jura lies in the aging of the "base" wine in empty barrels so that there are the conditions for the development of Flor, a veil of yeasts that proliferates in particular humidity situations.and is responsible for the vinification of Sherry as well. The Flor enriches the liquid with integrated oxidative notes and gives it complexity. The aging takes place in small oak barrels and lasts more than six years.

Vin Jaune presents itself in the glass with an intense, almost enchanting golden hue. The nose has an infinite and unique complexity, typical of great oxidative wines: walnut husk, toasted hazelnut, chestnut honey are just a few of the descriptors that come to mind when approaching this multifaceted nectar. But it is on the palate that the liquid shows all its character, like a true thoroughbred: the attack driven by freshness is just a prelude to the wine expanding across the entire palate, effortlessly taking possession of it. The persistence cannot be quantified in seconds, given the infinite duration of the retro-nasal sensations. An unmissable bottle for lovers of the genre.
