The ‘Akashi’ Single Malt Whisky from the White Oak Distillery brand is a Japanese whisky of exemplary elegance and depth produced in the city of Akashi, located in the Hyogo prefecture, near Kobe. The White Oak brand is part of the Eigashima distillery, founded in 1888, which was among the first in all of Japan to obtain a license to produce whisky, an event that took place in 1919. For a long time, the distillery dedicated itself exclusively to the production of Blended Whisky, with its first Single Malt released in 2007 under the name ‘Akashi’, a line that today includes a selection of various fine whiskies, among which this Single Malt stands out.
The production of the White Oak Distillery Single Malt Whisky ‘Akashi’ begins with the processing of barley malt, blended with water from the aquifers. After alcoholic fermentation, the fermented mash is distilled in Pot Still stills, an operation that the distillery performs only two months a year between June and July. Subsequently, the distillate is aged for a period ranging from 4 to 7 years in American oak barrels.previously used for the maturation of Bourbon and Sherry, capable of imparting peculiar notes to the whisky. In particular, the ‘Akashi’ Single Malt comes from a selection of the best barrels, which is why the quantity produced is quite limited.
