Nicolas Therez is a French producer from the area of Serres, a small commune in the Upper Aude Valley in Languedoc-Roussillon, an area where Nicolas's winery is the only winery belonging to the Vigneron Indépendants de France association, founded to promote and assist small independent winemakers. The estate is the result of the union of two families, the Therez and the Caruso, who in 2008 decided to merge their vineyards to achieve sustainable, high-quality production. Nicolas Therez is in charge of agronomy and winemaking, assisted in the cellar by Amandine Caruso. The small village of Serres, the winery's headquarters, is located a few kilometers southeast of Limoux, a commune famous for its sparkling wine called Blanquette de Limoux.
Nicolas Therez's estate has 35 hectares of vineyards surrounded by forests and rooted on clay-limestone soils. Most of the plantings are on south-facing slopes, and the entire vineyard area is conducted under a certified organic system. Mauzac, Chardonnay, Chenin Blanc, Pinot Noir and Carignan represent the varieties grown by the estate through mostly manual agronomic operations aimed at safeguarding the integrity of the grapes and preserving the health of the soil and plants. The oenology adopted by Nicolas and Amandine tends to support the transformation of the grapes into wine by excluding invasive interventions. The sparkling wines are made according to the prized Classic Method technique, which involves frothing in the bottle and prolonged aging on spent yeast. The exception is Cuvée Nature, which is made following the Ancestral Method.
The Nicolas Therez winery's production includes still white and red wines and Classic Method and Ancestral Method sparkling wines, all interpretations played on qualities such as finesse and harmony. In particular, the bubbles manage to combine remarkable smoothness with a certain complexity, while the still wines show a fruitiness in evidence.
