At the sip it shows a vibrant savory freshness and a soft and harmonious body, with long persistence
“Acini Perduti” from the Piedmontese winery Tappero Merlo is a traditional white wine of the territory, boasting ancient origins. Historical records dating back to the 1600s already speak of a particularly good white wine made from local grape varieties. Centuries later, the recipe has remained unchanged and is now presented in a particularly interesting version. The aromatic richness and fruity softness of the aromatic grapes perfectly complement the elegance and savory freshness of other varieties, creating a perfect taste combination.
The white “Acini Perduti” by Tappero Merlo is the pure expression of grapes of excellent quality, cultivated according to the rules of organic farming and the principles of biodynamics, with the intent to produce healthy and genuine wines. The grapes come from young vines, grown in hilly areas, at an altitude of about 300 meters above sea level, on soils of glacial origin, characterized by a predominantly sandy matrix. The harvest takes place towards the end of September, with manual picking of the best bunches. The fermentation is started directly in oak tonneaux, using only indigenous yeasts. After aging, it completes the long maturation period with 6 months in the bottle before being put on sale.
The wine “Acini Perduti” is a white wine of good structure, particularly suitable for pairing with vegetable risottos, seafood main courses, and especially flavorful baked fish. It is absolutely worth trying with a platter of fresh or semi-aged cheeses. In the glass, it presents a light yellow color with bright reflections. The olfactory profile is rich and broad, with aromas of medicinal herbs, citrus zest, ripe white-fleshed fruit, floral hints of broom, and delicately spicy notes. The sip is harmonious and rich, with good complexity and aromatic persistence, finishing on fresh and pleasantly savory notes.
