The Aglianico “Jungano” from the Campanian winery San Salvatore is a fresh, young, and fragrant version of this noble red grape variety from our south, capable of producing wines of extraordinary elegance and complexity. In the Cilento area, Aglianico has found the soils and climate to express itself at excellent qualitative levels, highlighting its great enological potential. The delicate winemaking and a partial aging in wood give a harmonious and soft red, which, however, retains a pleasant youthful verve, expressed through intense, fragrant fruit and a sip characterized by a beautiful expressive tension.
“Jungano” is a pure Aglianico that originates from an unspoiled territory of rare beauty. The San Salvatore winery is just a stone's throw from the Temples of Paestum, in the area of the Cilento and Vallo di Diano National Park. Within a large estate with olive groves, woods, orchards, and arable land, there are about twenty hectares of vineyards, cultivated with the most important native Campanian grape varieties, in particular: Aglianico, Fiano, and Greco. The mild Mediterranean climate, always ventilated thanks to the presence of sea breezes, and the particularly suited soils have proven to be very suitable for vine cultivation. The Aglianico vineyards are located on medium-textured, clay-limestone soils at about 200 meters above sea level, in the municipalities of Paestum and Capaccio.
The wine “Jungano” San Salvatore is the result of a selection of grapes vinified in temperature-controlled stainless steel tanks, with the classic maceration on the skins. The wine matures for 12 months, partly in barrique, partly in tonneau, and partly in steel, before being blended just before bottling. Its color is deep ruby red, with aromas reminiscent of blackberry, cherry, dark berries, aromatic herbs, soft spices, and delicate balsamic hints. On the palate, it is medium-bodied, with ripe tannins and a soft, harmonious sip with a rich and intense fruit. The finish is long, persistent, fresh, and balanced.
