The Aligoté from Domaine Castagnier is a white wine with a crunchy and smooth sip, supported by a pleasant minerality and good acidity, which returns to the nose in the citrus peel notes that accompany the warmer nuances of ripe yellow fruit. The sapidity and freshness expressed on the palate make it an ideal wine to accompany fish crudités!
The Bourgogne Aligoté from Domaine Castagnier represents a fresh and mineral interpretation of this Burgundian white grape variety. Recent genetic analyses have discovered that Aligoté originated from a cross between Pinot Noir and Gouais Blanc, the latter being a variety that is now little known but played a key role in the past as the progenitor of numerous important grape varieties. Domaine Castagnier produces this label from a 3-hectare plot of Aligoté, located near the winery in the municipality of Morey-Saint-Denis, in the Côte de Nuits.
Domaine Castagnier Bourgogne Aligoté is a pure expression of the eponymous grape from old vines planted partly in 1929 and partly in 1965. The vineyard is managed according to organic and biodynamic practices, and the harvest is accompanied by a rigorous selection of the grapes. In the winery, the clusters are gently pressed, and the resulting must undergoes spontaneous alcoholic fermentation in stainless steel tanks with the intervention of only indigenous yeasts.indigenous. Once the fermentation process is complete, the mass is aged for 14-15 months, 2/3 in steel and the remaining part in old neutral oak barrels. This is followed by blending and final bottling without prior clarification or filtration.
The Aligoté Bourgogne from Domaine Castagnier has an intense straw yellow color. The nose offers pleasant hints of ripe yellow fruit and citrus that meet aromas of flint and delicate floral and herbal notes. Fresh and harmonious on the palate, characterized by citrus notes that accompany the long and mineral finish. An Aligoté that can be enjoyed as a classy aperitif or at the table paired with assorted seafood appetizers.
