Select is the classic aperitif liqueur belonging to the long liquor tradition of Veneto. Made according to a 1920 recipe prepared by the Pilla Brothers which includes over 30 botanicals, it has always been a perfect ingredient for mixing and for making different cocktails, such as the classic Venetian Spritz. Select is a historic aperitif from the great Italian tradition, today distributed by the famous Montenegro brand. It is a bitter created in the heart of Venice by the Fratelli Pilla distillery, who, thanks to solid experience in the art of crafting artisanal liqueurs, aimed to create an exceptional aperitif, with the desire to make it one of the symbols of the lifestyle of the splendid lagoon city. It is a concentrate of passion, originality, selection, and research, which has resulted in a unique and unmistakable taste. The label's success came almost unexpectedly, and in just a few years, Select became the preferred aperitif of Venetians. Excellent to enjoy neat, with a splash of soda and a few ice cubes, it is also appreciated as an ingredient in classic cocktails like the Americano or Negroni.
The preparation of Select is based on careful experimentation, which led to the selection of as many as 30 different botanicals including herbs, plants, roots, barks, and spices, to create an aperitif that coulddistinguish itself from other bitters on the market, thanks to an intense and elegant personality. Among its ingredients, two are particularly important: the Rhubarb root, which undergoes a maceration process before being processed to extract the typical aromatic and slightly bitter note, and the Juniper berries, macerated to extract fresh balsamic notes and resinous nuances. To these main aromas, other ingredients are added, allowing for a complex and harmonious bouquet.
Even today, Select is produced according to the oldest practices, with very slow macerations of aromatic herbs in a hydroalcoholic solution, followed by hot boiling to obtain an extract of particular richness. The distillation of juniper berries is carried out using a classic discontinuous copper alembic. The final result is a harmonious and intense bitter, with a perfect balance between citrus aromas, sweet sensations, spicy and bitter notes. Due to its taste characteristics, already in the 1960s, Select was used forprepare the Spritz, along with white wine and sparkling water, an aperitif that still today represents a classic in the bars of Venice, only recently supplanted by the version that includes the use of Prosecco together with Select.
