Chablis "Les Venerables" from La Chablisienne is a white wine with an intense and mineral character, perfectly representing the classic style of wines from this magnificent terroir of Burgundy. This is a pure Chardonnay, grown in a region with a very cool climate and on soils of ancient marine origin. The limestone soils give the wines a particular finesse and elegance, which makes them absolutely unique and unmistakable. Because of its taste characteristics, it is perfect to enjoy with appetizers, seafood entrees, sushi, or a board of fresh goat cheeses.

"Les Venerables" de La Chablisienne is a Chablis born in the largest reality of this famous French Appellation. La Chablisienne is a cooperative founded in 1923, producing quality wines capable of bringing out the different facets of the complex terroir of Chablis. The grapes come from other plots located within the appellation, cultivated with vines at least 50 years old and producing few bunches per plant but of remarkable quality and extraordinary aromatic concentration. The vines are rooted in classic Chablis soils composed of Kimméridgien limestone and fine limestone-clay marls. After soft pressing, which is carried out in each winemaker's cellar immediately after harvest, the must is transferred to the Cave Cooperative, where it is vinified with fermentation in temperature-controlled stainless steel tanks. The wine matures for 12 months on the lees, partly in steel tanks and partly in oak barrels.

The Chablis wine "Les Venerables" from La Chablisienne is ideal for learning about the special characteristics of one of the world's most famous appellations. The selection of the best vines and centuries of experience allows the production of a great white, which is deep yellow in colour with golden highlights. The bouquet gives complex and elegant aromas reminiscent of white-fleshed fruit, citrus fragrances, hints of dried fruit, toasted and iodine scents. The entry on the palate is clear and fragrant, with ample, rich and persistent aromas, giving a long finish of vibrant freshness.
