Maison Ayala is among the most beloved of great Champagne enthusiasts, who prefer cuvées that focus on purity and refined freshness of expression. It is based in Aÿ, a few kilometers from Epernay, in the heart of one of the most important areas of the region. It was founded in 1860 by Edmond de Ayala, who immediately demonstrated his innovative spirit. In 1865, he launched the Dry version of his Champagne on the market, drastically reducing the sugar dosage in an effort to make a wine that was purer and in tune that the new demands of a rapidly evolving market. In 1882, Ayala was among the Maisons that started the Syndicat des Grandes Marques, which would later become Union Des Maisons de Champagne. Its success was very rapid, and by the 1920s Ayala was among the most important producers ever.

Ayala has managed to keep the allure of the era intact to this day, and in 2007 it built a new, more modern and efficient winery, which has allowed it to raise the quality standards of production even higher. The Maison, a faithful expression of the Aÿ terroir, has always been linked to the Chardonnay grape variety, which forms the fundamental basis of its blends and connotes its style of finesse and elegance. The domaine manages prized parcels in more than 70 crus of the region, located in the finest areas of the Montagne de Reims, Côte des Blancs, Les Riceys, Montgueux, Vitry-le-François territories, in the Grand Crus of Chouilly, Oger and in the Vallée de la Marne.

Each parcel is vinified separately to bring out its particular characteristics. The extraordinary richness of the Maison's mosaic of vineyards, allows, to rely on a very wide choice of vins clairs, so as to always create balanced and harmonious assemblages. Ayala can also count on a centuries-old savoir-faire. A heritage of knowledge and experience that still guides all cellar choices, in winemaking operations and aging. Maison Ayala offers a wide range of labels, whose common thread is a search for finesse, freshness and absolute elegance. They are linear and vertical Champagnes, deep and taut, vinified and aged in steel, with low dosage and long aging on the lees in the Maison's caves.
