Ghislain Payer et Fille's Brut Nature Champagne is the zero dosage sparkling wine from Fleury-la-Rivière in the Vallée de la Marne. The winery has chosen to use an equal quantity of each grape variety to highlight the intrinsic qualities of their terroir. A direct and very fresh wine, with typical scents of citrus fruits and baked apple, then notes pastry and roasting. The sip is taut, savory and the copious bubbles tickle the palate, a perfect wine for any fish dish

The Champagne Brut Nature from Récoltant Manipulant Ghislain Payer et Fille represents a pure and authentic interpretation of the Vallée de la Marne. The winery is currently managed by Elise Payer, to whom in 2014 her father Ghislain entrusted the 4 hectares of property, supporting her in the management. The Payers adopt a sustainable agronomic approach, so as to pass on intact and healthy to future generations the land they cultivate. The pruning operations are then carried out rationally with two main objectives: to limit yields while raising the quality of the grapes and to prevent the occurrence of diseases and rot.

Ghislain Payer et Fille Champagne Brut Nature is born from an equivalent blend of Pinot Meunier, Chardonnay, and Pinot Noir from vines grown in soils characterized by an abundant presence of limestone, gypsum, and marine fossils. The manual harvest is accompanied by a strict selection of the bunches, which are then gently pressed. Subsequently, the vinification takes place entirely in steel tanks and, once ready, the sparkling base is bottled and added with liqueur de tirage for the second fermentation according to the Champenoise Method. After at least 48 months of aging on the lees, we proceed with the dégorgement and the consequent non-dosage, filling the bottles with the same wine, without added sugars, thus enhancing the attributes of the terroir.

The Champagne Ghislain Payer et Fille Brut Nature has a straw-yellow color with golden reflections, with fine and persistent bubbles. The nose expresses aromas of lemon, baked apple, and almond, enriched by irresistible pastry notes. On the palate, it is dry, very fresh, and taut, with good sapidity and abundant fine bubbles.
