The Cuvée Prestige is the flagship of the small maison of Christiane Guillaumée, a winemaker from the Cote des Bars, on the southern border of Champagne. Her production is characterized by an original and impeccable style based on freshness and vitality. In this case, the style of the maison is embellished by a taste-olfactory richness of great value, which does not undermine the energy and verticality typical of the appellation, but supports and prolongs them.

Guillaumée's Champagne Prestige Brut is made mostly from Chardonnay grapes, with 30% of Pinot Noir added to it. The vines are rooted on clay and limestone soil in the Aube region, and the harvest is conducted strictly by hand. In the cellar, alcoholic and malolactic fermentations are carried out entirely in steel, with 25% reserve wine added to prepare the cuvée. After refermentation in the bottle, according to the Champenoise Method, aging on the lees is longer than for the house's other labels, reaching about 30 months. The stay on the lees is responsible for the enthralling fragrances of pastry, butter and bread crust.

Champagne Guillaumée 'Prestige' is a great representative of the Cote des Bars terroir, a perfect blend of fresh-mineral energy and a beautiful Champenoise richness. The aromas evoke many variations of fruit and citrus, with distinct hints of grapefruit, combined with nuances of honey, butter, grilled almonds and sweet pastries. This rich olfactory framework is offered with delicacy, harmony and discretion, winning over even the most squeamish taster. The taste proves consistent with the nose: fresh and vibrant, punctuated by a soft, creamy perlage. The advice to fully appreciate its value is to pair it with seafood and shellfish. One idea out of all? Thermidor-style lobster.
