These are stony and poor lands, very rich in mineral substances and particularly suitable for excellence in viticulture. The harvest is done manually during the second half of September. After destemming, the grapes undergo a short cold maceration and then a soft pressing. The must ferments in stainless steel tanks at controlled temperature. Before proceeding to bottling, the wine matures on the lees for several months, still in steel, in order to enrich itself with structure and aromatic complexity.
