Organic and biodynamicThe Etna Bianco 'Fermata 125' by Baglio di Pianetto is a pure Carricante, a burst of freshness with the finesse and structure typical of the area. The grapes are harvested from sandy vineyards among the highest in Europe, cultivated strictly under organic farming. After 6 months in steel and a few weeks in bottle, the wine is ready: floral and citrusy, it presents delicate mineral hints. On the palate, it is fresh and balsamic, an intriguing profile to try with Asian dishes, even spicy.
The Etna Bianco Baglio di Pianetto ‘Fermata 125’ is a fresh and saline interpretation of Carricante, the most prized white grape variety of Etna. The ‘Fermata 125’ project was born on the northern slope of the volcano from the collaboration between the Palermitan estate Baglio di Pianetto and the Etna estate Cantine Valenti, the latter located in the municipality of Passopisciaro. The label depicts the first train that inaugurated the historic Circumetnea railway, known as the “littorina”, to which the ‘Fermata 125’ selection pays tribute. Not by chance, the 125 stop is located right in front of Cantine Valenti and represents one of the four stops located in the municipality of Passopisciaro.
Baglio di Pianetto Etna Bianco ‘Fermata 125’ is a 100% Carricante cultivated according to the principles of certified organic farming on sandy volcanic soils situated at an altitude between 750 and 800 meters above sea level. In the winery, the grapes are vinified in white through soft pressing and alcoholic fermentation in temperature-controlled stainless steel tanks. It is followed by a maturation period of 6 months always in steel and then a further short rest in the bottle before being released on the market.
In visual examination, the ‘Fermata 125’ Etna Bianco by Baglio di Pianetto shows a brilliant straw-yellow hue tending towards golden. Seductive aromas of apple, orange blossoms, lemon, acacia flowers, grapefruit, and anise describe the fragrant aromatic profile. On the palate, freshness and salinity stand out, accompanied by a persistent balsamic and mineral finish. It is a refined and balanced Carricante, an excellent pairing with seafood cuisine, particularly typical Sicilian dishes such as sarde a beccafico, stuffed squid, and anchovy meatballs.
