Folo Bianco from the Vina Zaro winery is a fragrant and aromatic Slovenian white wine from the region of Istria, perfect with fish and vegetable dishes. This label is made from a blend of Malvasia, Pinot Bianco, Pinot Grigio and Bianchera grapes, harvested by hand and vinified in stainless steel tanks using only indigenous yeasts. The golden yellow colour with brilliant reflections illuminates the glass while aromas of white flowers and ripe yellow fruit inebriate the nose. The fascinating Istrian territory gifts us with Vina Zaro ‘Folo Bianco’, a fresh and floral Slovenian interpretation originating from a blend of different white grape varieties, processed with a brief contact between the must and the skins. The soil where the grapes grow is called “ponca”, the same found in the Friulian Collio. It is a peculiar type of terrain, made up of alternating layers of marl and sandstone, which is particularly suited for viticulture as it can optimally regulate the water availability for the plants. In fact, while sandstone does not retain water, avoiding the risk of stagnation, the layers of marl absorb it, releasing it during the drier periods and thus preventing excessive water stress.

The ‘Folo Bianco’ from the Vina Zaro winery mainly consists of Malvasia Istriana, to which smaller percentages of Pinot Grigio, Pinot Bianco, and Bianchera are added; the latter variety, not to be confused with the homonymous olive cultivar, is a clone of Erbaluce. The vineyards, rooted in the ponca,are managed under a certified organic regime. After manual harvesting, the grapes are macerated for one day and then gently pressed. The alcoholic fermentation occurs spontaneously in low-temperature stainless steel tanks, where the subsequent maturation period of 6 months on the fine lees also takes place. The wine is finally bottled without undergoing filtration.

Vina Zaro 'Folo Bianco' has a golden yellow color with brilliant reflections. The olfactory profile, full and fragrant, reveals floral notes alternating with hints of ripe yellow-fleshed fruit. Soft on the palate, tempered by a notable fresh-salty push that accompanies the long mineral finish.
