AKA's ‘Foglie di Fico’ is an unprecedented and elegant Kombucha. Starting with the fermentation of black tea leaves and adding an infusion of fig leaves, an unprecedented drink is obtained, thanks also to a second fermentation of three months in the bottle: balanced, smooth, with a very low alcohol content and suitable for accompanying meals. A kombucha, therefore, to be treated like a sparkling wine, also suitable for mixing!

The Kombucha 'Foglie di Fico' from the modern Milanese reality AKA is a tea fermented product through a second fermentation in the bottle, like Champagne, appreciated for its balanced and refined taste. Kombucha is a fermented tea beverage characterized by a very light alcohol content, probably originating from China, arriving in the West around the early 20th century. However, it is only in recent times that this fermented drink has gained great success in the Western world, also thanks to the new generation of consumers, increasingly attentive to the healthiness of the products consumed.

The production of Kombucha AKA 'Foglie di Fico' begins with a base of Assam black tea infusion, to which raw cane sugar and the so-called “scoby”, a symbiotic culture of yeasts and bacteria that allows the fermentation of the liquid, during which a small amount of alcohol is produced that is mostly converted into organic acids, is added.Subsequently, the fermented drink is bottled with the addition of selected yeasts from Champagne for the second fermentation in the bottle, according to the Classic Method. During processing, the infusion of fig leaves and kefir water is also used, capable of adding further complexity.

The Kombucha 'Foglie di Fico' AKA has a straw yellow hue with orange shades. The nose expresses fascinating notes of almond, malt, tea, and fig leaves, enriched by toasted hints. On the palate, it is soft and elegant, with great harmony, featuring sweet vegetal sensations characteristic of fig leaves and delicate oxidative notes typical of tea. A kombucha designed as an alternative aperitif to the great classics, which can also be served at the table paired with various dishes.
