Organic and biodynamicThe Passerina from Lazio “Costafredda” by Carlo Noro is an intense white, produced with pure Passerina, typical of the Frosinone area. A quick maceration on the skins gives great body to this aromatic white, with hints of dried fruit: apricots, oranges, grapefruit introduce a finish rich in notes of Mediterranean scrub. On the palate, it has a great body, slight astringency, and moderate freshness, to be paired with white meat dishes like Roman-style chicken
The Passerina del Lazio "Costafredda" by Carlo Noro is born in Piglio in the heart of Lazio, a territory suited for the production of great red and white wines known internationally. Carlo Noro's work has been revolutionary from the beginning: strongly convinced that man's work on the land has been devastating and not attentive to the preservation of natural heritage, he decided to shape the work of his cultivated lands entirely following the dictates of the biodynamic regime. Thanks also to the help of his winemaker Michele Lorenzetti, the production of the winery is destined to grow over time.
The pure Passerina grapes of the Passerina del Lazio "Costafredda" by Carlo Noro are cultivated on soils predominantly composed of sandstone and clay for wines with a strong character. The vineyards are located about 400 meters above sea level and the soil is worked using only natural fertilizers and decoctions of the best wild herbs from the estate: the manure used comes from the cows that graze in the nearby fields and eat only what nature provides. The harvest is conducted manually and in the winery spontaneous fermentation takes place thanks to the action of indigenous yeasts in steel; it then ages for 8 months always in steel before being bottled.
The Passerina del Lazio "Costafredda" by Carlo Noro presents itself with an intense golden yellow color with brilliant reflections. The aromas recall dehydrated fruits, citrus fruits particularly orange, and herbs of the Mediterranean scrub; on the palate it presents a good intensity with a body structure and a slight astringency on the finish. It is recommended to pair with white meats in stew, local cured meats; interesting with sushi and sashimi and aged cheeses.
