The Passito by Caprai is a sweet red wine with a characteristic aroma of caramel and dried fruit. It is made from dried Sagrantino grapes, vinified according to the ancient Umbrian tradition. The sip is pleasant and rich, sweet just right, with an elegant tannin and a very long persistence.

The Passito di Sagrantino from the famous Umbrian winery Caprai represents one of the best interpretations of a historic wine from the Montefalco area. According to the oldest traditions, in fact, Sagrantino was almost always vinified to produce sweet wines. The presence of residual sugar helped to soften the typical tannic roughness of the grape variety. The vinification of appassite grapes allows for a rich concentration of aromas and a scent capable of seducing with alluring notes of ripe red fruit and harmonious hints of oriental spices. It is a perfect wine to pair with chocolate desserts or desserts based on berries.

The Passito di Sagrantino wine is produced by one of the most important wineries in central Italy. Caprai has played a decisive role in the revival of viticulture in Montefalco, courageously focusing on the qualities of Sagrantino. Today, its wines are an essential reference point for the entire area and represent national excellence. In addition to producing very interesting labels of dry vinified Sagrantino, Caprai has kept alive the tradition of producing a dessert wine with appassite grapes. It is a unique wine in its kind. A passito from red grapes of extraordinary depth and aromatic richness, which fits into the centuries-old history of the territory, reaffirming the excellence of a timeless wine that is still capable of evoking emotions today.

The Sagrantino Passito di Caprai is one of the most interesting expressions of this precious specialty of Montefalco. At the end of the harvest, the best bunches of Sagrantino are dried, so that the berries slowly dehydrate, concentrating the sugars and aromas. After the classic red vinification, with a long and slow fermentation on the skins, the wine matures for 18 months in barrique and completes the aging with 12 months in bottle. In the glass, it presents a dark ruby red color with garnet reflections. The bouquet is complex and rich, with aromas of small dark berries, sour cherry, plum, hints of dried fruit, soft oriental spices, and vanilla. On the palate it is broad, enveloping, with dense and alluring aromas, which anticipate a harmonious and very persistent finish.
