The Falerio 'Montagna' by Velenosi is a high-altitude Pecorino from the Marche region, born between 560 and 700 meters in the districts of Pie di Cava, Valle d'Acqua, and Acquasanta Terme, in the heart of Ascoli. The grapes are pre-cooled before pressing to maximize freshness and aromaticity, then they ferment in steel at controlled temperatures followed by a long aging on fine lees. On the nose, it is complex yet cheerful, with herbal notes, hawthorn flowers, and hints of peach and green apple.
