Don PX di Toro Albalà is a sweet fortified wine produced from dried grapes of Pedro Ximenez and aged for several years in partially empty wooden barrels. Fortified with the addition of brandy, it features an intense and rich aromatic profile of raisins, dehydrated fruit, nuts, toasted almond, cocoa, and ethereal and toasted nuances. On the palate, it is robust, refined, and harmonious, with an extraordinary balance between sweetness and acidity.

Pedro Ximénez “Don PX” is born in the Toro Albalà estate, which cultivates its vineyards near Cordoba, in the heart of Andalusia. Following the oldest customs of the area, the winery produces great wines, inspired by the tradition of the Jerez de la Frontera area, commonly known by the English name of Sherry. The Pedro Ximénez grapes are harvested around mid-August at full ripeness and with a high sugar content. The healthiest bunches are subjected to a drying process of about a week to dehydrate the berries and concentrate the sugars and aromas. At the end of the gentle pressing, the must is vinified in white with a slow fermentation process, which is stopped to retain some residual sugars. After a maturation period, the wine is fortified with brandy, reaching an alcohol content of 17% vol. At this point, the aging period begins in American oak barrels, until the wine reaches full expressive maturity.
The “Don PX” from Toro Albalà is a unique Pedro Ximénez. It is a bottle that must be tried to discover one of the sweetest wines rich in history and charm. In the glass, it presents a dark brown color, with a dense, material, and almost viscous appearance. The olfactory profile is fascinating and expresses a particularly rich and intense array of aromas, ranging from dried fruit to sultana grapes, from dried figs to dates, from candied fruit to dark chocolate, from freshly ground coffee to bitter cocoa, from tobacco to woody notes.
