Organic and biodynamicThe "Pinner" by Cavallotto is a still white wine obtained from the white winemaking of a red grape. The aromatic profile is predominantly fruity and smells of pineapple, mango, apple, and pear with hints of white flowers. The taste is decidedly fresh and of great finesse, balanced and of remarkable elegance.
The Pinner is a label that features a red grape in an original version, that of white wine. Thanks to the experience of the Cavallotto winery, always ready to amaze even with this product, which breaks the traditional molds of what one would expect from a company deeply rooted in the terroir of the Langhe in Piemonte. However, one should not linger on the abstract, because there is not only originality of ideas in this Pinner: it is indeed a wine of excellent craftsmanship, with engaging aromas, where structure and minerality peek out from an initial whirlpool of fruity notes, giving a satisfying sip.
The label of the Pinner wine states: "a white wine obtained from black grapes". This is therefore a white vinification of a red grape variety that normally produces reds. The grapes, once harvested, are fermented in steel tanks at low temperatures for a period ranging from 20 to 30 days. Then, it is aged in steel and, after bottling, another 3 months in the bottle.
The white wine Pinner presents itself to the eye with a hue reminiscent of golden yellow. The nose prominently highlights notes of fruit, including tropical, enriched by light floral nuances and mineral touches. On the palate, it has a good body, precisely presenting an elegant sip that relies on a pleasant freshness and a taste with good persistence in the finish. A particular, very interesting bottle that shows how the Cavallotto winery is perfectly capable of stepping outside the traditional canons of Piedmontese viticulture, producing original labels that pose new challenges to consumers and the market.
