The Pinot Noir "Apertura" by Cascina Pastori Colombo presents itself as a fine and well-executed expression of this noble grape variety in Piedmont. Aged in wood and in bottle, it is characterized on the nose by delicate aromas of raspberry, pink pepper, blackberry, pomegranate, and juniper. The palate is of beautiful freshness and gustatory harmony, with well-crafted tannins and spicy returns on the finish

The Pinot Nero “Apertura” from Cascina Pastori Colombo is part of a large project for the qualitative enhancement of this well-known international variety in Piedmont. A dream come true for Antonio Colombo, a recognized cardiologist, made possible through a fruitful collaboration with the winemaker Riccardo Cotarella. A total of 5 hectares out of 10 are exclusively dedicated to Pinot Nero in Bubbio, in the heart of the Asti hills so loved by Cesare Pavese, surrounded by woods, with the sea peeking in the distance.

“Apertura” Cascina Pastori Colombo is made from Pinot Nero grapes, sourced from the Pratolungo and Pantalini vineyards aged between 10 and 60 years, growing on soils rich in intense blue calcareous marls typical of the Borbera Valley at an average altitude of 300 meters above sea level. Once brought to the winery, the grapes are left to cold macerate with the skins for 5 days, after which alcoholic fermentation takes place in temperature-controlled stainless steel tanks at a temperature of 20-22 degrees. Once racked, the liquid is transferred to woods of various sizes and capacities, where it will remain for 15-18 months to mature.

Cascina Pastori Colombo cares deeply about this “Apertura,” presenting an authentic and coherent image of Pinot Nero produced in the Piedmont production area. Visually, it presents itself with a light and clear garnet red color, and already on the first nose, it reveals a series of inviting aromas of fresh fruit and wildflowers, with raspberry, blackberry, and pomegranate juice peeking through the lightly spiced notes of black pepper and juniper. On the palate, it enters delicately, supported by vibrant freshness and verticality, with well-measured tannins, spicy echoes, and a long aromatic persistence on the finish.
