Fresh and well-balanced, it fills the glass with aromas of lime flowers, notes of anise, and mineral hints.

fermentation, while the remaining half is transferred to old French oak barriques where it undergoes the fermentation process spontaneously. Just before the final conclusion of the transformation, the two masses are blended in steel and the fermentation is stopped, in order to preserve a small amount of natural sugars.
