The Riesling Trocken “DOM” from Bischöfliche Weingüter Trier is a fresh white wine from the Moselle region, produced by a centuries-old reality from the city of Trier. An austere yet young version, with great freshness and aromaticity, featuring notes of white flowers, yellow fruit like peaches and hints of lemon and flint, the fresh and smoky character typical of Riesling. On the palate it is dry, with great precision and liveliness, very persistent on the finish. To be tried with aromatic risottos, with fish or vegetables

The Riesling Trocken “DOM” Bischöfliche di Weingüter Trier is born in the lush Moselle Valley, a region considered among the most productive in Germany. The origins of the winery are very ancient: the current one is the union of three previous wineries, namely the Bischöfliche Priesterseminar, the Bischöfliches Konvikt, and the Hohe Domkirche, which began their activities between the end of the Eighteenth century and the first half of the Nineteenth century. In 1966, the current Weingüter Trier was established, an icon of the territory and famous for producing wines of rare and historic quality.

The vineyards of the Riesling Trocken “DOM” Bischöfliche di Weingüter Trier extend over about 50 hectares of land, facing southeast, an ideal position for the sun's rays to consistently hit the grapes, ensuring excellent ripening at harvest time. The soil is composed of clay and slate, which give the wines a characterful and intense structure. The climate is continental, characterized by winters with cold temperatures and snowy phenomena.and hot, sunny summers. The harvest is conducted manually, due to the position of the vineyards on steep slopes that prevent machinery intervention. In the winery, alcoholic fermentation occurs in steel and aging always takes place in steel for several months.

The color of the Riesling Trocken “DOM” Bischöfliche di Weingüter Trier is a straw yellow with intense golden reflections. The bouquet of aromas recalls peach and apricot, citrus notes of lemon, and summer white flowers; on the palate it is fresh, lively and mineral with a good final persistence that invites drinking. It pairs excellently with crispy fried fish, appetizers based on mollusks and crustaceans, and steamed fish.
