
Rosso dell'Abazia Serafini e Vidotto 2020
The Red of the Abbey of Serafini and Viadotto is a Bordeaux blend from the Montello area of great enveloping and structure that matures for 15 months in barriques. It develops a very intense and rich aromatic profile, with notes of myrtle, cherry, aromatic herbs, resin, and balsamic nuances. The sip has power and muscle, with a rich and velvety texture, supported by a pleasant freshness and well-integrated tannins.
The “Rosso dell’Abazia” by Serafini e Vidotto is produced in Nervesa della Battaglia in the area of the Colli Asolani, in Friuli-Venezia Giulia. Francesco Serafini and Antonello Vidotto decided to start cultivating these lands, purchasing about 20 hectares of land near hilly and foothill areas. The first harvest took place in 1985 and even today the work follows the philosophy of careful and environmentally respectful cultivation of the surrounding environment and the raw material: the daily commitment is to beautify the cultivated landscape with the perspective of leaving it as an inheritance to future generations.
The Cabernet Sauvignon, Cabernet Franc, and Merlot grapes of the “Rosso dell’Abazia” by Serafini e Vidotto come from vineyards planted on soils mainly composed of brown and dark red clays. The continental climate proves perfect for the growth and development of great international grape varieties for wines of impeccable quality, also thanks to the favorable solar exposure to the southeast. The grape harvest is manual between the end of September and the first days of October; it undergoes alcoholic fermentation in steel and ages in barriques for 15 months; there is further aging in the bottle for a year.
The “Rosso dell’Abazia” by Serafini e Vidotto has an intense ruby red color that captivates the eye. The bouquet is complex with distinct aromas of ripe red-fleshed fruit such as plums and sour cherries, candied citrus, floral and herbaceous notes; on the palate, it reveals a full-bodied, harmonious character with elegantly integrated tannins and a long and complex finish that makes the drinking experience intriguing. It pairs perfectly with cuts of red meat, game such as pheasant; interesting with aged mountain cheeses.
