The Salted Gin from the young Italian brand Extillo is an artisanal distillate with a peculiar savory taste due to the use of salt crystals from the Apulian salt pans in its production. The Extillo project originates from the passion and creativity of young lovers of the spirits world, strongly determined to produce top-quality distillates using purely artisanal techniques. This Salted Gin represents their first label, made from ingredients sourced in Italy and crafted with care and love.
Extillo Salted Gin is produced from a combination of Italian ingredients, such as botanicals from Lake Iseo and salt from the Apulian salt pans. In addition to juniper, the main ingredient in all gins, the botanicals used include citrus fruits such as sweet orange, pink grapefruit, and lemon peels, as well as flowers like chamomile and orange blossoms. These ingredients are infused for a variable period in agricultural alcohol and subsequently distilled using a small 45-liter still that operates according to the discontinuous method. The gin is finally bottled in very limited series and hand-packaged with a wax coating.
Visually, Extillo's Salted Gin presents a transparent and crystalline appearance. The nose is a celebration of aromas that range from fresh citrus notes to fragrant floral aromas, passing through pleasant hints of rhubarb and juniper. The entry on the palate is decisive and enveloping, with a marked savory note that accompanies citrus and floral sensations consistent with the notes perceived on the nose. This artisanal gin can be enjoyed neat to appreciate the purity of its nuances or can be used in the preparation of classic cocktails, such as Gin Tonic and Negroni.
