It is a fresh rosé wine, immediate, fruity, and drinkable, with aromas of small red fruits, flowers, and aromatic herbs.
“Simply Pink Wine” is a rosé with an artisanal face, produced by Cascina degli Ulivi, located in the hilly area of Novi Ligure. It is a wine straightforward and genuine, made according to the oldest traditions, with minimal intervention in the cellar, to preserve the expressive integrity of the grape without external interventions. It is an easy-drinking rosé, but with an intense flavor, making it particularly suitable for pairing at the table with first courses, white meats, or fish stew.
The rosé “Simply Pink Wine” is born in one of the most interesting realities of the Alessandria area. Cascina degli Ulivi was born from the dream of Stefano Bellotti, who, while still very young, began to work one hectare of land with the intention of producing wine. Today the estate extends over 22 hectares, half of which is cultivated with vineyards and the rest dedicated to arable crops. From the beginning, Stefano approached organic farming before switching to biodynamic in 1984. In the vineyard, green manuring is practiced to maintain the soil vital and fertile. In the cellar, very simple winemaking processes are followed, with minimal oenological interventions, so as to always keep the characteristics of the grapes and the terroir in the foreground.
The wine “Simply Pink Wine” by Cascina degli Ulivi is produced from vines about 30 years old, cultivated on soils characterized by the presence of clays and iron minerals. After gentle pressing in contact with the skins, the must is spontaneously fermented in large oak barrels with indigenous yeasts. In the glass, it presents an intense and bright cherry red color. On the nose, it releases fragrant aromas of ripe cherry, raspberry, red currant, small forest fruits, and hints of aromatic herbs. On the palate, it is juicy and fruity, with a crunchy and rich sip. The finish is harmonious and balanced.
