The Sherry Pedro Ximenez 20 Years from Bodegas Tradicion is a prestigious sweet wine with a exuberant and generous character, produced in Jerez de la Frontera using the traditional Solera method. The type of sherry Pedro Ximenez is one of the sweetest due to the natural tendency of the grape variety to accumulate sugars in the berries and the sun-drying process that the bunches traditionally undergo after harvest. Considered a minor variety for dry still wines due to the low content of organic acids in its grapes, Pedro Ximenez shows its best as a sweet wine.

Bodegas Tradicion Sherry 20 Years Pedro Ximenez originates from only grapes of the same white variety, carefully selected and left for a few days to dry in the rows. Subsequently, the dried grapes are vinified through alcoholic fermentation in oak barrels, stopped by the addition of alcohol in such a way as to leave a high level of natural residual sugars. The aging always takes place in oak barrels for a very long period according to the Solera Method, with the average age of the reserves being around 20-22 years.

The Pedro Ximenez Sherry 20 Years from the Spanish producer Bodegas Tradicion has an intense color between amber and ebony with a dense consistency. Rich and deep is the aromatic spectrum, defined by mature notes of dried plum, caramel, chestnut honey, licorice, and walnut that combine with evocative iodized hints. The sip is intense and powerful, creamy and velvety, with great persistence and balance despite the significant sweetness. This is a perfect sherry to drink alone at the end of a meal as a meditation wine, although it also pairs well with blue cheeses or particularly sweet desserts based on dried fruit and honey.
