The Sparkling Brut Nature from the Cantina di Caldaro Kaltern is produced from selected Chardonnay grapes at the foot of the Mendola Pass, in South Tyrol. The winemaking takes place partly in stainless steel and partly in Tonneaux with subsequent refermentation in bottle according to the Classic Method. Lively, clean and distinctly mineral, this Sparkling reveals a fine and persistent bubble and aromas of white flowers, yellow fruit and bread crust. Ideal to uncork for a toast or with a full meal, also with fish main courses or a vegetable risotto
The Spumante Brut Nature from the Alto Adige winery Cantina di Caldaro – Kellerei Kaltern is a Classic Method sparkling wine made from pure Chardonnay grapes with a clean and well-balanced style. The pedological matrix of the vineyards in the Caldaro area and the typically alpine climate, characterized by significant temperature fluctuations between day and night, create the ideal conditions for growing grapes intended for sparkling wine production, thanks to the high acidity, the mineral imprint given by the soils, and the important aromatic heritage of the grapes.
Cantina di Caldaro – Kellerei Kaltern Spumante Brut Nature is a 100% Chardonnay from vines over 30 years old located at the foot of the Mendola Pass. In particular, the vineyards rest on dolomitic limestone soils exposed to the east and situated at a height of about 600 meters above sea level. Following the harvest, the grapes are transferred to the winery for soft pressing of whole clusters, with the resulting must undergoing alcoholic fermentation at controlled temperature, for 70% of the mass in stainless steel tanks and for the remaining 30% in tonneau. In the same containers, the liquid rests for several months until bottling with the addition of tirage syrup for the second fermentation according to the Classic Method, associated with a long aging of 48 months on the lees in glass. Finally, after disgorgement, the sparkling wine is topped up with the same wine, thus without dosage.
The Spumante Cantina di Caldaro – Kellerei Kaltern Brut Nature has a straw yellow color tending towards golden with fine and persistent effervescence. The aromatic bouquet evokes fragrant notes of yellow apple, hawthorn, and bread crust, surrounded by mineral hints of flint. On the palate, it is fresh and clean, with a solid savory-mineral character enhanced by the elegant bubbles.
