The Metodo Classico Blanc de Blancs from the Marche winery Cossignani L.E. Tempo is a fresh and fragrant sparkling wine, made with 100% Pecorino, an ancient grape variety that has been recovered and enhanced in recent decades thanks to the tenacity of local winemakers. It is a typically territorial label that perfectly expresses the centuries-old bond between a grape variety and a terroir. It is one of the most interesting sparkling wines made with indigenous grape varieties and captivates with its fruity richness, well balanced by a lively freshness. The Blanc de Blancs Metodo Classico by Cossignani L.E. Tempo is the result of the desire to produce a great sparkling wine in the Marche region. The estate is managed according to the principles of organic farming, with cover cropping to maintain soil fertility and promote biodiversity. The Pecorino vines are 30 years old and are cultivated at an altitude of 200 meters above sea level with south and southeast orientation, on soils composed of limestone and sandstone. The harvest is done manually in the second half of August. The grapes undergo cryomaceration for 24 hours before soft pressing. The must is cold decanted and then started to ferment, partly in cement tanks and partly in oak barrels, with partial malolactic fermentation. In the following spring, the final blend is created. The second fermentation takes place in the bottle according to the Metodo Classico, with a stay on the lees of 18 months before disgorgement.

The Spumante Blanc de Blancs Cossignani L.E. Tempo is a Metodo Classico that offers immediate pleasure. Thanks to a well-calibrated aging process, it preserves intact the varietal characteristics of the Pecorino grape.
