The Sparkling Classic Method Brut Rosé “Bollicina Gold D&G” by Donnafugata is a fine and elegant Classic Method that originates in the estate of Randazzo, at the foot of Etna, from Nerello Mascalese grapes. Designed in a golden guise and created in collaboration with Dolce&Gabbana, who designed the label, Bollicina Gold enhances Sicilian craftsmanship and savoir-faire, uniting the history of the two companies. The brief maceration on the skins, which gives it its characteristic pink-golden color, and then aging on the lees for about three years makes it complex and deep. The aromatic profile opens with hints of currant and citrus peel, with notes of rose petals, echoes of toasted dried fruit, and hints of pastry. The sip is fine and enveloping, with a thin and persistent perlage, a delicate freshness, and a very long savory finish. Excellent paired with raw fish, such as the red shrimp from Mazara del Vallo
