The Spumante Metodo Classico Rosé Cossignani L.E. Tempo is a label that enhances the characteristics of freshness and elegance of Sangiovese. It is produced in the Marche, by a winery that boasts experience of more generations and a great knowledge of the territory. Thanks to this expertise, it was realized that the particular pedoclimatic conditions of the estate and the characteristics of the grapes could allow the production of a Metodo Classico. A choice in line with the trend that has developed in Italy in recent decades and that has led to the production of numerous sparkling wines with indigenous grape varieties. The delicate aromas of small red berry fruits of Sangiovese blend with a fine perlage and a lively freshness, giving a pleasant tasting experience.
The Metodo Classico Rosé is born in the Cossignani L.E. Tempo estate, located in Contrada S. Pietro, in Massignano. The winery manages a property of about 20 hectares, conducted in organic farming. From the beginning, it decided to focus on the production of sparkling wines with indigenous grape varieties. The Sangiovese grapes come from vineyards that are about 30 years old, cultivated in a hilly area, at an altitude of about 200 meters above sea level, with sunny exposure to the southeast. The soils are composed of limestone and sandstone and are particularly suitable for viticulture. The manual harvest of the grapes takes place around mid-August. The bunches are cooled for 24 hours before being pressed very gently with a short contact on the skins. The must ferments partly in cement tanks and partly in barriques. The base wines are blended and the cuvée undergoes a second fermentation in the bottle according to the Metodo Classico, with a stay on the lees of 18 months.
The Spumante Rosé Cossignani L.E. Tempo is a Metodo Classico of good structure and aromatic intensity, particularly suitable to be enjoyed at the table with a platter of cold cuts, seafood appetizers, or with stews of shellfish. It seduces the eye with a bright pale pink with brilliant reflections, crossed by a fine and persistent perlage. The bouquet is characterized by delicate floral scents of iris and violet, aromas of red currant, raspberry, wild strawberries, pomegranate, aromatic herbs of the Mediterranean scrub, and crusty bread. Smooth and fragrant, it has a crunchy and savory sip, leading to a finish of great freshness and good persistence.
